When I have chosen manually my stitching points I want the program to create my panorama but without cropping the final picture ie I want to choose where the final picture is cropped on both axises. Is this possible?

Just right-click on the final image, and choose 'Show source'. You can then choose the cropping region.

I have tried this in Wizard step 7 but the "Show source" option is grey ie not possible. What is wrong?

This is because you still are in the wizard mode, where some functions are not availaible.
Terminate normally the wizard by clicking the next & terminated buttons, and once the wizard panel has gone, you will have access to this function. If you have to restart the wizard to change some settings (control points, quality, etc...), just right click the assembled picture and choose 'restart wizard at ...'.
